For the batter:

½ cup flour
6 eggs
½ cup milk
2 ounces of melted butter

For the crepes and sauce:

3 tablespoons of butter
¾ cup sugar
2 ounces of orange (4-5 slices)
powdered sugar for garnishing

How to Make Crepes Suzette

  1. For the batter:

    Add the flour, eggs, milk, and melted butter to a blender. Blend until smooth. Set aside.

  2. For the crepes and sauce:

    Melt 1 tablespoon of butter in a skillet over low heat. Add 1/4 cup of batter.

  3. Cook for up to 2 minutes, or until golden brown. Turn with a spatula and cook for up to a minute. Set aside. Do the same with the remaining batter. We’ve got 5 crepes.
  4. Add the sugar to a saucepan over low heat. Cook and continuously stir until caramelized.
  5. Add the orange slices, cover them with caramelized sugar, and cook for 1 minute. Set them aside.
  6. Add the remaining 2 tablespoons of butter to the skillet and stir until it melts.
  7. Fold each crepe twice and add it into the bubbling mixture. Cover them with it using a ladle. Place the cooked slices of orange on top. Garnish with powdered sugar.

For the crepes:

1 ½ cups of flour

How to Make Deep Fried Pumpkin Filled Crepes

  1. For the cookie mixture:

    Add the cookies, sugar, and cinnamon to a blender and blend.

  2. For the crepes:

    Strain the flour into a bowl, add the sugar and whisk. Add the eggs, vanilla extract, and melted butter and start whisking again. Gradually add the milk in the process. Season with salt and set aside.

  3. For the pumpkin mixture:

    Add the baked pumpkin, butter, and pecans to a bowl and mix them using a fork. Set aside.

  4. For the egg wash:

    Add the eggs and milk to a smaller bowl and mix them. Set aside.

  5. For making the crepes:

  8. Add the flour, egg wash, and cookie mixture, each onto a smaller oblong tray plate. Coat each pancake with flour, egg wash, and cookie mixture.
  9. Fill a bigger sauce pan halfway with vegetable oil and heat it over medium heat. Deep fry the crepes both sides until golden brown.
