It might look like a pizza, but it is not! This casserole is built upon a crunchy layer of sweet potatoes and topped off with melted mozzarella, yummy bacon, and a sunny side up egg! All that and some flavorful tomato sauce! It’s the best “fake pizza” you need to try!

Ingredients Needed for Sweet Potato and Bacon Casserole

2 sweet potatoes
1 teaspoon oil
¼ cup mozzarella, shredded
6 bacon
2 mushrooms
½ cup tomato sauce
1 egg
1 teaspoon dried oregano

How to Make Sweet Potato and Bacon Casserole

  1. Preheat the oven to 350 degrees F/ 180 degrees C.
  2. Slice the sweet potatoes in thin slices.
  3. Add the oil in a cast-iron skillet.
  4. Place the sweet potato slices on the bottom of the skillet in circles, so that they cover the whole skillet.
  5. Sprinkle the shredded mozzarella on top of the potato slices.
  6. Add the 3 bacon slices in a flower pattern.
  7. Slice the mushrooms and add the pieces over the bacon.
  8. Pour the tomato sauce over all ingredients.
  9. Crack an egg in the middle of the skillet.
  10. Sprinkle dried oregano over the dish.
  11. Sprinkle another layer of shredded mozzarella.
  12. Cook in the oven for 20 minutes.
