Chicken, Salami and Onion Tortilla

With lots of quality ingredients, this delicious tortilla is a very satisfying meal on its own. It’s got chicken breast, salami, lots of veggies, but its secret lies in the delicious roasted tomato sauce.

  • 8-10 cherry tomatoes
  • 1 ounce (30 grams) butter, melted
  • 1/4 cup (60 ml) tomato sauce
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cumin
  • 1/4 cup (65 ml) chicken stock
  • 1 tablespoon olive oil
  • 2 tablespoons vegetable oil
  • 2 onions, sliced
  • 10 salami slices
  • 1/2 iceberg lettuce
  • Salt
  • Pepper
  • Thyme
  • 2 tablespoons vegetable oil
  • 2 chicken breasts, around 5 ounces (140 grams) each
  • 2 tortilla wraps
  • Avocado (optional)
  • Heat a skillet over medium heat, and add the tomatoes.
  • Add the melted butter and cook the tomatoes, until they’ve softened.
  • Set them in a blender, and season with cumin and nutmeg.
  • Pour half of the chicken stock and olive oil. Blend everything until smooth.
  • Heat 1 tablespoon of vegetable oil in a skillet over medium heat. Add the onion, and cook it until it softens. Add the salami, lettuce, and give it a good stir.
  • After 1-2 minutes, pour the tomato blend and the remaining chicken stock. Season with salt, pepper, and thyme. Cook for 1 more minute and turn off the heat.
  • Heat the remaining oil in a skillet over medium heat. Add the chicken breast and season it with salt, pepper, and thyme. Cook it for 20 minutes, turning it so you can evenly cook it.
  • Serve everything in a warm tortilla.
  • You can add avocado for a fresh touch.
